Day 26: All about Nikko 

 I can’t really talk too much about dieting or anything of the sort today. All I could do yesterday was wait in eager expectation for the arrival of our new kitten- Nikko.  He is so adorable, sweet and fragile. 

 Our friend Maura found him abandoned in the park when he was only a couple of weeks old- he’s only about 3 weeks right now. We are so thankful to be part of his survival story.  He is a survivor, a warrior!  

 His name comes from the village Nikko in Japan- our favorite place while we visited.   It means SUNSHINE.  The Japanese saying “Never say ‘kekko’ until you’ve seen Nikko”—kekko meaning beautiful, magnificent or “I am satisfied”—is a reflection of the beauty and sites in Nikkō.- WiKi.  

 With all the excitement I had to cook a special dinner- and Almond crusted salmon was just the thing. 

 Day 26 menu: 

 Breakfast: cottage cheese and pineapple and a poached egg 

 Lunch: Greek salad and hummus

Oh, and I am down 10lbs!!!!
