Day 8: Back in Business
After a less than perfect weekend, in more ways than just the wings I ate, I am back in business.
I’ve realized that eating healthy is all about preparation, and yes it does take extra work. This isn’t one of those quick fixes. I guess the ole saying is true— good things aren’t easy. So my lunch was cooking while my dinner was in the oven.
Day 8 Menu:
Breakfast- the usual smoothie around 7am and two boiled eggs around 9am.
Snack- a few almonds and blackberries
Lunch- Chipotle Salad with chicken, fajita veggies, and tomato salsa.
Snack- a few more almonds
Dinner- wild-caught salmon with lemon, pepper, oregano, basil, and garlic, and a tiny bit of sesame oil. In the oven for 30 mins at 350.
And a mixed salad with mushrooms, bell peppers, red onions, and olive oil and lemon.
Lunch for tomorrow is lentil soup— the first time I have ever made lentil soup! It’s yummy.
I need to get better at recipe writing!
Lentil soup- Lentils, vegetable broth, stewed tomatoes, onions, garlic, cumin, coriander, sesame oil, and carrots.
In a hot pan, add sesame oil, the onions, and garlic and cook for 5-6 mins, then add the spices, lentils and tomatoes. Bring to a boil. Then turn to low and cook for 45mins. Once the lentils are soft, blend on low and leave it a bit chunky. Delicious!!
